Every brand and restaurant has its own story.
Ours begins with Danny Cruz and his wife Vilexys Salas, who decide to share their dream with their partners Omar and Dulce Lugo, young Mexican entrepreneurs who, like Danny, work on the growth of their brands. The project starts with visits to various Omakase restaurants in the United States. An experience that seduces them and encourages them to create their own Japanese restaurant in a country that had always excited them: Spain.
Unbeknownst to them, Chef Johan Pereira, along with his partner, desired to open their own business after establishing one of the most disruptive restaurant brands, “Salvaje,” in countries like Panama, Spain, France, and the United Arab Emirates. From his learnings with his Itamae and his time at Makoto, the desire to reach out to customers and serve the best Omakase dishes hand in hand was born.
Erwin Rodríguez, chef and partner of Johan, was alongside him in search of a project in our country where he could pour his knowledge from “Salvaje” and his apprenticeship as a chef, alongside the best. Today, after arduous work, we have turned the dream of all those involved into reality. Now, it’s time to make history.
